Fredo's Phillys - and Bar-B-Que!

I was at Fredo's earlier this week (usual order - can't get enough of that cheesesteak with cheese and onions - gooey and messy decadence!) and found out that Dan's going to be bringing in Louisiana BBQ on Fridays and Saturdays. (No idea if it's all day or just in the evening, though - probably a good idea to call.) Apparently the beef and pork is smoked for 12-hours - I assume that's a good thing, since I'm not 'Que afficianado.

Anyway, I grabbed a menu and here's a brief synopsis:

All dinners include baked beans, potato salad, bread

1lb. Rib Dinner - $13.50 for pork, $11.50 for beef
Chicken Dinner - $9.00 for white meat, $8.00 for dark meat
2 Link Sandwich (hot or mild) - $5.00, Dinner - $7.75
Sides (8oz) - $3.00 for baked beans, $3.00 for potato salad, $2.50 for bbq sauce
Desserts (12oz) - $4.00 for peach cobbler or banana pudding
1/2 slab of ribs (no sides) - $15.00 for pork, $12.00 for beef
Full slab of ribs (no sides) - $26.00 for pork, $23.00 for beef

    So this weekend Mr.Tums went to Fredo's to get himself a sandwich (so nice of him to go without me!). I told him to check out the BBQ and he reported back.

    He said that Dan (that's his name right?) said that the whole thing is on hold right now. I guess the person doing the BBQ needs 3 people to help her out and he needs those 3 workers to cook up the sandwiches. So the only other way to do it would be for her to bring the food already cooked. So he's re-thinking the whole thing.

    I think this is what Mr. Tums said, if I have this wrong (which I might) I wouldn't be surprised.

    Bummer.

      Yea I went over there on Sat to grab a few of the works and while I was waiting I chatted up with Dan about the whole BBQ thing.

      Basically is like what Bigtums mentioned above. The BBQ lady found that she really needed about 3 people to help her with the BBQ and basically there just wasn't enough room for them and the pple running the grill for the Cheesesteaks in the kitchen. He said they're thinking of opening up somewhere close or just looking for another space they can do the BBQ.

      In addition I found out that Dan's signed them up with a delivery service so in a couple of weeks expect to be able to phone in delivery orders given a minimum order price. Also, he's thinking of opening on Sundays at least for lunch and eventually full time once he can get a second manager up so he doesn't ahve to be there all the time ( he said he's training one now but doesn't expect to be able to take days off the restaurant for like 2 more months).

      Anyways theres an update of any of you who were wondering.

        I'm still waiting for a report on the BBQ. But I guess he's not doing it this weekend? Unless he just wasn't doing it on Friday and Saturday. If that's the case, MAYBE someone will go today and take one for the team?

        Just ate a pepper cheesesteak...yum-o! Too too bad it's such a trek for me (or maybe that's a good thing). Anyhow, Dan said the bbq lady won't be there today or tomorrow. In case anyone was jonesing for some bbq...

          I just left Fredo's an hour ago.. ate most of it in the car on the ride home, that is a great sammich! Not exactly close to the valley (sfv) but I keep going back.

            My DH noticed that someone from Chowhound put their name down on the clipboard, and Dan commented on how many of us go there. We probably went in a few minutes after you. Btw, I got the same thing last night, too! I know...I know 2 days in a row may be a bit much. But, they're so good! Of course, I couldn't resist those Tastykakes!

              yup that was me... I know many chowhounders go there so I thought I would leave my mark.... I gotta say if I lived nearby, going 2 or 3 times in a row would be the standard for me.

          Okay. It's Friday, and I live just around the corner from Fredo's. Anybody wanna guess what's on my lunch menu tomorrow?

            Oh, please let us know how it is! I've been hoping for a report all night (okay, so that's a slight exaggeration, but you get the idea). Though I don't know if the BBQ menu is just in the evenings - you might want to call Dan and find out.

            I'm going to try to stop by and pick up a beef and pork dinner plate tonight. Although when Mr.Tums finds out that I went to Fredo's for the ribs he'll probably get upset that I didn't come home with a cheesesteak. He's no way near a foodie like me but he loves this place.

              I wonder who it is I hope not Robins, and maybe Canyon City. Maybe that guy who BBQ's up on N. Lake on the weekends, North of New York Drive. Anyone have the scoop?

                I met the woman who's providing the ribs - her name is Rosie (IIRC), didn't say anything about being with Robin's or any other restaurant. The menu with the BBQ stuff was titled "Just Ribs" at the top, FWIW.

                  Thank you! He told me that when I went a couple of weeks ago but did not have a menu yet. He said that someone who was well versed in the world of BBQ was coming in and taking over that part of it. Can't wait to try it!

                      Um, last weekend, apparently. (I never make it there on the weekend *sigh*.) So it's my understanding that the BBQ will be there tomorrow evening, too.
