Baking isn't my strong suit, so go ahead and yell if I'm wrong...but can't you just leave the nuts out of those recipes? I can't imagine nuts making much of a difference unless they're ground and absorbing lots of liquid.
For some recipes, yes, you can just leave out the nuts. The recipes I've been finding, though, have been more like Mexican wedding cookies, where the nuts are integral to the dough. Thanks for the thought, though!
