Baking with spirits

Hi. I'm researching recipes for baked goodies (cupcakes / cakes, muffins, cookies, brownies and similar) that use alcohol for flavor, such as Rum. I'm looking for as much variety as possible (I've heard of a chocolate pie w/ Jack Daniels). What have you all got?

  1. Bourbon pecan pie is a classic. I've had Amaretto, Kahlua, and Bailey's cheesecakes (not altogether, though that would be good). Frangelico would be great with hazelnut brownies, or Amaretto with almond cookies. Maybe a tequila key lime pie?

    1. "The Spirited Vegetarian", a new-ish cookbook by Paulette Mitchell, has several baked desserts with alcohol. Her recipe for Apricot Brandy Pound Cake is widely available online - here's one link:

      I haven't made this cake, but it sounds wonderful.
