How far in advance can one make aioli without sacrificing the flavor and texture of fresh? I'm hoping the day before is okay... Haven't made homemade mayonnaise in years and am out of practice. Thanks!
i make a big recipe and it last for days (7-9) be sure to whip it after the first day
the day before should be just fine.
Store it in a well sealed jar (I find uncovered, mine absorbs fridgey food odours) and like John says, re whip it before you serve.
