So I'd like to try and make some granola cookies that resemble those made by Margaret Palca Bakes in Brooklyn. They are rich and buttery and not too sweet, but have a nice bite to them, and are sort of spherical rather than flat. Recipe suggestions?
I do not know about the cookies in Brooklyn, but I have made 2 batches of these recently, and they are really delicious...Granola and Dried Cherry Chocolate Chip CookiesFantastic granola and dried cherry chocolate chip cookies from Chef Noah Bekofsky of Aria.
1 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 stick unsalted butter, softened
3/4 cup firmly packed light or dark brown sugar
1 large egg
1/2 tsp. pure vanilla
1-1/2 cups granola
1/4 cup dried cherries, chopped
1 cup semisweet chocolate chips (6 oz.)
Preheat the oven to 350 F. Mix the flour, baking soda, baking powder and salt together in a bowl. Cream the butter and sugar together in another bowl until lightly and fluffy. Add the egg and beat until well combined. Add the vanilla. Stir in the dry ingredients, granola and finally the dried cherries and chocolate chips. Drop the dough by rounded tablespoons 2" apart onto buttered cookie sheets and bake in the middle of the oven 12 to 15 minutes or until golden. Cool on racks.

Chunky Monkey Chocolate Toffee Granola cookies.
1 1/2 cups all-purpose flour
1 cup granola or oatmeal
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks, 1/2 pound) butter, softened
3/4 cup granulated [white] sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
1 tablespoon kahlua ( could use the caramel Davinci syrup possibly)
1 cup (1/2 of a 12-ounce package) Chocolate chips
1 cup (1/2 of a 12 ounce package) Toffee crumbles
1 cup chopped nuts
COMBINE dry inrgedients in large bowl. Beat butter, granulated sugar, brown sugar, vanilla and kalhua in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. The mixture should be slightly firm, if it seems to runny add a little more flour. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Press slightly flat.
BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
