white balsamic vinegar: what to do with it?

I am a novice to white balsamic vinegar. Just bought a bottle today at Trader Joes. Besides salad dressing, what can I do with it? Suggestions welcome.

    perhaps my single most favorite condiment aside from ketchup. for a vegetarian....

      thank you all. I have a ton of cherry tomatoes, so the salad idea or the salsa sounds good. I haven't tasted it yet, so I'm looking forward to it.

        Try this for a basic vinaigrette - 2 T white balsamic, 4-5 T good olive oil, pinch dried basil or oregano, 1 T dijon mustard, several shakes white pepper. Place in jar, shake up to emulsify well, serve over a butter lettuce hearts of palm and sliced mushroom salad next to a chicken or pork entree. Way yum.

          I do several things with it

          1. Cut up a lot of fresh veggies and dress with olive oil and white balsamic
          2. Grill fish then use the white balsamic to make a salsa combining pesto ,olive oil,and grape tomatoes

            I use it as the acid part of a Pavlova base instead of the traditional white wine vinegar.
