Just happened to see something about masala dosa on another board, and it got me to thinking about my one attempt to make them at home. The dosas were great. Nice and fermenty, pretty crisp, but my potato curry filling was pretty awful. My first problem was not being careful with the mustard seeds. I put in too many, and didn't wait long enough for them to pop. In general, the flavor just wasn't there. Any tried and true recipes?

  1. The summer 2006 issue of Gastronomica (http://www.gastronomica.org/) had a wonderful article and recipe for making masala dosa (The Masala Dosas in My Life | Ramesh Avadhan). Unfortunately, the article is not available online but you can buy back issues there.

Boil 2 small potatoes, once done, cool, peel and dice into small pieces. In a pan, put about 2 teaspoons of vegetable oil. at medium heat and once the oil is hot, put in about 3/4 teapspoon of mustard seeds, let it splatter and crackle. Put in about 1 green chilli and a clode of garlic paste in the oil. Then put in the diced potatoes and saute it for a minute or 2. Put about 1/4 to 1/2 tsp turmeric powder and salt to taste. saute it again. Put about 1 tsp chopped fresh cilantro and you can let it brown a bit if you like it a little crisp. It should be done in about 10 minutes. Hope this helps.
