Mabel's Just For You Cafe - Oatmeal Pancake Infatuation

Chowhounds! I went to Mabel's Just For You Cafe (http://www.justforyoucafe.com/) in Potrero Hill in San Francisco yesterday, and ordered the oatmeal pancakes, and fell in love. I'm determined to learn to make these things.

The cakes were large enough to cover an outspread hand, just barely crisp on the outside, with a center that was fully cooked but still somehow almost molten, so melty and delicious was the texture. The inside of the pancakes tasted almost like perfectly-cooked oatmeal, making me wonder whether COOKED oats might not be an ingredient. I've been browsing oatmeal pancake recipes online, but see that uncooked oats are usually called for.

Has anyone else sampled these pancakes? Any ideas to help me recreate the recipe myself? If I can't make 'em, I guess I'll just be forced to commute to SF from Palo Alto every weekend this year....

  1. Ah! One more thing. The menu at the cafe states that these pancakes are wheat-free and sugar-free.

      I've never been to Mabel's but I do have a good oatmeal pancake recipe. People love them because they are heartier than normal pancakes.

      2c. whole cooking oats
      1/2c. quick cooking oats
      1/2 t. salt
      1/2 t. each baking powder and baking soda
      2c. buttermilk
      2 eggs
      1 tsp. vanilla extract
      1 T. melted butter

      Mix dry ingredient and we ingredients sperately. Mix together and let sit overnight in fridge. Drop quarter cup full of batter onto buttered skillet--smooth out with knife to make them more pancake like. Cook about 2 minutes on each side.

        Hmmm - no wheat, no sugar, and the sitting overnight might soften the oats to the point where they seem as soft as cooked oats in the finished pancakes. I'll have to try that. Thanks!

          I forgot---I usually add a tablespoon of sugar---DH likes things sweet. I've made many times without and they are still good. In fact, I have a huge bowl of batter in the fridge right now and I'm just waiting for DH and DD to wake up so I can start cooking!

          You said 2 cups of whole cooking oats. Would those be steel cut oats or something else? I am confused by that. Thanks!

      2. Quick update, folks -- I went back to Mabel's and asked about the pancakes, and they're from a mix, available at marthasallnatural.com. Look for the oatmeal pancake mix -- sugar-free, wheat-free. I plan to order a bunch. Still going to try out the recipe, though. New vistas in breakfast carbs are opening before my eyes....
