Ina Gartens Cheddar Corn Chowder
Has anyone tried this? (im sure many have!) My question is not if it is good (how could it not be) but if you have any tips on making this soup. I wanted to freeze some- do you know if it would freeze well? Any suggestion on what to serve with it for a nice lunch? does anyone include the corn cobbs while the soup is cooking? Thanks!
I've made this several times, including using frozen corn, and it's still delicious. I've never frozen the soup though so I can't help you there. I generally serve it with greens dressed with a simple vinaigrette and cheddar biscuits or crusty bread. Have also served it with crab cakes.
I made it last summer. it was delicious. It froze just fine. I served it for dinner (reheated-- the guests loved it). It is pretty hearty, if I remember correctly. I think I bbq'd chicken, made a green salad and a fruit salad, etc. For lunch, I'd serve with a pretty simple salad and maybe grilled chicken. Enjoy!
