I've always liked the chicken at Amy Ruth's, especially as part of a chicken-and-waffles breakfast plate, but the amazing fried chicken at Miss Mamie's Spoonbread has it beat. That's the Spoonbread version below, with collard greens and the weekends-only cornbread stuffing.

If by "charlie" you mean Charles Southern Fried Chicken, I've filled up at the buffet a number of times (uptown only, not the newer Lenox location), and his chicken is excellent when it's just been put out; when it's been sitting awhile, it's merely very good. Fortunately you can always load up on other items until a fresh batch of fried chicken appears.

What is so good about Charles Southern Style Kitchen's chicken? I went based on all the recommendations and didn't really care for the chicken. It might have been sitting around awhile which made it lose its crispyness, but I found it somewhat bland. Is real Southern fried chicken supposed to be largely unseasoned?

I grew up in Connecticut, so I can tell you only that Charles' and Amy Ruth's tend to be blander and Miss Mamie's, spicier, and I like it spicy. Best fried chicken I ever had (and that Mamie's brought to mind) was the salty and peppery version at Praline Connection, in New Orleans, shown below.

Good home style fried chicken at Margie's Red Rose on 144th Street and also for wing style at Harlem Wing and Waffle on 7th Avenue.

I enthusiastically second the Margie's Red Rose Diner recommendation. You have to go on the early side - Margie usually leaves by 7:30 or 8pm - but for breakfast, lunch or early dinner, she's totally consistent and the chicken is always well-seasoned, hot and cooked right.
