first, what kind of fish should I use? planning to marinade and bbq.
any other ideas? recipes? seasoning?
want to hunt down some fresh masa for the tortillas.
a firm fish like halibut or snapper works well for this. a quick marinade in lime, cilantro, oil and salt and pepper with a fast turn on the grill works great. more than 10 or so minutes in the marinade and the fish will start to "cook". and beware just how fast fish actually can go from raw to woefully overcooked on the grill.
