Need menu help

I've got 18 people for a very casual evening at the end of August. I've catered cheese enchiladas, rice and beans and Mexican rotisserie chicken. I'll have chips, salsa and guacamole. I'm going to make a large green salad. I'd like a couple of additional side dishes. I thought of corn salad with red onion and black beans, but it doesn't excite me. I'd appreciate any ideas for not-too-complicated things that I can make in quantity, preferably a day in advance. Thanks.

  1. There is a superb recipe on epicuriuos for a corn/cabbage slaw that is truly first-rate.

    1. I think you've got it covered. I didn't see beverages, ie margaritas, sangria, Mexican beers. Also flan for dessert or, if time is a problem, ice cream (coffee or vanilla) with Kahlua on top.

        Beer and sangria were on my list, but I couldn't manage to think about dessert. I'm hopelessly inept with flan, but ice cream with Kahlua sounds perfect.

      2. i would make the corn salad with black beans and just add a few more things. i pretty much make it for all potlucks and is always a big hit. just corn, beans, red onion, mango or nectarine (any fruit will work really), lime juice, bell peppers, cilantro, cumin and tomatoes. everything chopped and don't forget to salt it. it's even better after a day or two. sounds like a great party, have fun!

          I love it. I do actually put tomatoes and cilantro in mine, forgot to mention, but the fruit sounds like a really good addition. Thanks!

              also on my group recipes page (click on my icon - stolichnaya to get there) there are a couple more recipes that might work for you...guac, salsa and some other entrees - tomatillo/pinto enchiladas and mexican black bean burgers.

          2. How about a large batch of pralines? Another thought...Queso...

            1. Jicama/orange salad is easy and a great buffet dish.
              Peel jicama, cut into matchsticks (sort of the size of McDs fries). Orange sections or slices (peeled). Marinate overnight with lime juice, a pinch of salt.
              Before serving add a sprinkle of cayenne to taste (or not), cilantro leaves for decoration (optional also). Or just chop some cilantro for guests to add to taste.
