Can I freeze baba ghanoush?

(Or any of the variant spellings thereof?)

I lost my head at the farmer's market and ended up with loads of eggplant. Made a vat of baba ghanoush, gave lots to friends, but still have more than we can consume without eating it exclusively. Anyone freeze it? Tell me your tips? I'd love to have some homemade, say four months from now, when eggplants are more expensive. Is it doable?

  1. I've never frozen baba ghanoush, but I imagine it'll be fine if you freeze it, as I often freeze similar eggplant dishes (haleem bademjaan, mirza ghasemi, etc) and they come out fine when thawed.
