Veggie River Food
A bunch of us are going tubing tomorrow, and I'm to bring the grub. Usually I pick up some fried chicken, wrap it in foil, and throw it in the cooler on top of the beer. However this time we have some vegetarians with us and I'm stumped. Here are the requirements:
- Must survive well in a cooler for a few hours. Bread products tend to get mushy.
- Finger foods only. We'll be eating while sitting in tubes floating down the river. Beer in one hand, grub in other. No napkins. No utensils.
- Should be entree-like. Cut up veggies are nice, but not a meal.
- Minimal waste. Foil is OK since it floats and we can recycle it with the beer cans. Paper disintegrates in water. Tupperware will get lost.
I have no trouble cooking vegetarian. It's just the river that threw a wrench in this. The food is secondary on this trip. I had considered wraps, but even those might get sloppy after sitting on ice for a while. Definitely need a single dish and not side dishes. Ideas?

I've made some pretty hearty granola bars from scratch that hold up really well.
If you're thinking salty, you can cut baked tofu (in refrigerated section of market) into strips and wrap it with tomato and avocado in a lettuce leaf or wilted swiss chard leaf.
I think tortillas would hold up well in foil and in a cooler. But maybe you could make spring rolls with rice paper if you are worried about soggyness.
