Searching for 24 Karat Carrot Cake recipe

Hello all!! Hope your weekend is starting off well. Mine just ended, and in a few hours, my Monday will begin...

Would like to post a request for a copycat recipe of Paradise Cafe and Bakery's 24 Karat Carrot Cake. Single-layer chunky goodness containing black walnuts, coconut, pineapple, and carrots (of course!), minimal cake, and a top layer of cream cheese frosting that I can do without! Recipes welcome, but I would also love to hear your suggestions of other places that serve even better carrot cakes than that of PC. Again, I'm looking for chunky cake with minimal cake, and the less embedded layers of frosting, the better, as I am allergic to the cornstarch found in powdered sugar that is a vital ingredient of frostings.

    Is it heresy to ask if you've tried Trader Joes' 24 Karat Cake?

      I haven't tried TJ's carrot cake. Hope the ingredients' list doesn't scare me off... Have you tried the recipe you gave me? Thanks for your reply!

        I have not tried it...

        The one i use is this http://allrecipes.com/Recipe/Sams-Fam... and dont use the nut when I do it b/c I don't like them. You can easily omit the frosting entirely and top as you prefer.

          Has anyone tried Alton Brown's carrot cake recipe? I hear his recipes are fool-proof...he cracks me up! I love his shows!!
