I am looking for an electric griddle primarily for pancakes, french toast, grilled cheese sandwiches, etc. Does anyone have recommendations?
I live alone and cook for only myself, so I can use a small appliance like the Griddler (which will get knocked here, but I love it) which can do all of those things and more. The griddle element works really well and I've used it for all those things you listed. If you need more space, however, try the BroilKing pro griddle. It's expensive but it has added cool touches like splatter guards, drip drawer, and heavy duty handles.
If you want something more frugal, the Presto griddles are pretty affordable, but I've never used one.
Lodge Logic also makes a preseasoned one at a reasonable price. It's great for winter-time steaks, and also panini. You can order a panini press.
For electrics, you could also consider the Presto 16" non-stick skillet. It's long enough to cook several pancakes or toasts, and more versatile than a shallow griddle. All depends on what you need.
They are all pretty much the same performance/wattage wise. Look for drip cups and stay cool edges, immersability for cleaning and overall size depending on what size crowd you are looking to feed.
These are also frequent thriftstore/garage sale items so look around.
