13 ingredients, millions of ways [moved from LA board]

So I have the following ingredients and pretty much have decided how to use the tonight. I will make 3 dishes to eat with naan or pita.

Here is what I have:

Garbanzo beans
bamboo shoots
Green peppers
Black olives

What would you do in 3 different dishes?

  1. do you have any spices!?

    1. Starter: olives, olive oil, balsamic, bread

Main: a curry of garbanzo, curry, tomato, garlic, onion, green pepper

Main: a stir fry of tofu, asparagus, bamboo shoots, ginger

Dessert: figs w/ honey, mint or basil

      1. to start:
black olives (mix garlic and lemon rind into them if you have)
hummous - garbanzo beans, roast garlic, olive oil & if you have it tahini and lemon juice; alternately make a variation using a touch of curry

warm asparagus, fig & caramelised onion salad

main: south eastern style tofu curry - using ginger, garlic & curry powder, sautee onions and green peppers, add tomatoes (and coconut if you have - dry or cream/milk) and top with bamboo shoots to serve

        1. Balsamic Roasted Figs and Onions
----Par-poach figs in orange juice. Layer figs cut side down and onion wedges on a baking sheet. Drizzle with poaching liquid, olive oil, honey and a little balsamic vinegar. Roast in the oven at 350 til golden, soft and sweet. While roasting, reduce balsamic vinegar with almost equal part apple juice. Serve figs and onions drizzled with glaze.

Panzanella (with beans, tomatoes, olives, bell peppers, bread)

Curried Tofu Chow Mein (with bamboo shoots, ginger, garlic, curry, tofu, served w/ roasted asparagus)
