Curried Qunoa and Lemon Garlic Shrimp (split from Quebec)

would it be possible to get the recipe for your curry quinoa and lemon garlic grilled shrimp.sounds delicious

    I would love to share the recipe with you. It is very simple, tasty and healthy.

    Curry Quinoa
    2 1/2 cups quinoa
    5 cups water
    1 bunch scallions, sliced
    1 cup raisins or currants or craisins (or a mix!)
    2 1/2 tbsp. curry
    3/4 tsp. salt
    1/2 tsp. black pepper
    juice of 1 lemon
    1/8 - 1/4 cup extra virgin olive oil

    Combine quinoa and water in medium sized pan. Bring to a boil and turn heat down to low. Quinoa will be cooked in 15 minutes. (I basically cook quinoa like I would rice on the stove. The quinoa to water ratio I use is 1:2.)

    Put cooked quinoa in a large mixing bowl. Add remaining ingredients and mix well. Can be served warm or cold.

    You might want to adjust the seasonings a little depending on your taste preferences.

    Garlic Grilled Shrimp
    1 lbs of cleaned shrimp (20 - 30 count is best)
    3 cloves mashed garlic
    2 tbsp extra virgin olive oil
    1/4 chopped cilantro
    2 tbsp chopped fresh ginger
    fresh cracked pepper to taste
    juice of 1 lime

    I put everything but the lime juice in a bowl and let it marinade for at least an hour. Put the shrimp on skewers and squeeze fresh lime juice on top before grilling. Then just put it to a grill or grill pan and once the shrimp turns pink, they are done. Turn them only once. When serving, serve with a wedge of lime and top with a little bit more cilantro.

    A nice leafy salad and you have yourself a very nice, healthy dinner.
