Souvlaki HELP!! Who's got a good recipe?

I've actually never made souvlaki at home!! There I've said it!! Whew..hate to admit it but it is true. I would enjoy finding a recipe that's tried & true for either chicken or pork Souvlaki that's awesome? Can you fellow foodies help me? I'm craving it for dinner!!

    buy a lamb back fillet (1 per person) Marinate in OO, lemon juice, garlic, rosemary and oregano, for a couple of hours.

    Cook off in oven until done to your liking.

    (I personally like my souvi meat really well done, so once the backstraps are cooked, I cut them into souvi sized pieces and then re-baked them on an oven tray until all crispy and luscious)

    Toast a pita bead in a cast iron pan until browned. Add sliced onion, tomato, lettuce, fetta, souvi meat and tzatziki, Roll up and eat!!

      Once you've cut your meat into cubes, marinate it in a mixture of lemon juice, olive oil, chopped onion, minced garlic and LOTS of oregano. If you have some dry white wine kicking around, add some of that to the marinade as well.
      Leave in the fridge for 4 hours or overnight, then thread onto skewers and grill. Don't forget the roast potatoes and rice! :)

          I wouldn't leave it to marinate overnight - the meat could get an unappetizing mushy texture (from personal experience).
          Also, don't forget the Tzatziki sauce!
