        <content>My 13-year-old recently read Michael Pollan's "Omnivore's Dilemma," and, having more willpower than I do, is now refusing to eat any meat unless she knows it was raised humanely and sustainably.  (I know, defining "humane" and "sustainable raise a whole host of other issues, but it's a starting point.)

For fresh pork, there's always Niman Ranch and the guy who sells chops and roasts out of the back of his van at the local farmer's market.  But aside from Niman Ranch ham and bacon, it does not appear that either of these providers cures meat.  Does anybody know of a source for charcruterie from non-CAFO pigs?  Thanks in advance for any help.</content>

      <content>I believe Niman also makes salami and some other cured meats, but they're not widely available. You might check with whoever you buy your other Niman products from and ask if they can carry the whole line.

Where do you live? In the SF area there are a couple of people doing high-end charcuterie with humanely raised pigs (Fatted Calf, Fra Mani).</content>
