If you're looking specifically to build your career, I'd also take a good look at Sel de la Terre, as much to build your pedigree as your technique. Their bakery is certainly very good, but I'd also imagine that Frank McClelland's name would carry some clout in the industry.

You'll definitely want to try to get in to Flour. (The bakery, not actual flour. Although you'll need to get into that, too. I'll stop now.)

        Joanne Chang's the best.

          #1 Clear Flour (Brookline)
          #2 Canto 6 (Jamaica Plain)
          #3 Flour (South End/South Boston)

All excellent but I really "heart" Clear Flour. There is a reason people queue up 10 deep on Saturday mornings (rain, sleet, snow, sun) to load up on the delights inside. They are a first rate bakery with delightful breads and tarts!

I would suggest contacting the Culinary Guild of New England (culinaryguild.org). There used to be a Professional Pastry Guild of New England but I think that has folded and most of their members have joined the Culinary Guild. When you contact them, if you can get contact info for Lee Napoli that would be great. She has a vast amount of experience and is a very nice and helpful person.

Tryout the Modern Pastry Shop and Have a cappucino and one of their homemade
canoli's or Italian pastries--it is the best!! Hanover st. north end!

I agree with the Clear Flour statement. And actually a serious hound is one of the bakers there. I remain completely underwhelmed by Flour. So many things there just don't have the flava.
