anyone have a tasty rice pudding recipe?
Here's a good and very simple recipe from the More-with-Less Cookbook:
4 c. milk, scalded
1/3 c. rice
1/3 c. sugar
1/4 t. salt
dash nutmeg, cinnamon, or dried orange peel
Combine all ingredients in buttered baking dish. Bake at 275 for 2 to 2 1/2 hours, until rice is tender and milk is creamy. Stir occasionally during first half of baking time. (Option: add 1/3 c. raisins half an hour before removing from oven.) Serve warm or cold; pudding will thicken as it cools.
i just tried out this thai black rice pudding recipe last night and was very pleased:
2 cups sticky black rice
3 cups water
3/4 cup brown sugar
1 can coconut milk
1/2 t salt
1 mango, diced
combine water and rice in a big pot and bring to boil over high heat, stirring for a few minutes as it boils vigorously. lower heat to medium and cover, cooking for 10 minutes. then lower heat to very low and cook for an additional 30 minutes. right before the rice is done cooking, combine the salt, sugar and coconut milk in a small saucepan over medium heat until the sugar dissolves. when the rice is done cooking, add the coconut mixture to the rice and stir thoroughly. turn off heat, cover rice and let sit for 10-30 minutes. serve warm with diced mango.
this tastes even better reheated after it sits overnight - plus it makes a great breakfast.
Here is a recipe I have been making for years and everyone loves it. It is super simple and taste good warm or cold.
2/3 cup rice
1 quart 1/2 & 1/2
2 cups water
1/2 tsp salt
Bring mixture to a boil, reduce to simmer and cook for 25 minutes. Remove from heat
Add 2/3 cup sugar and stir
Beat 2 egg yolks in a one cup measuring cup then add enough cream or evaporated milk (your choice and both are good) and mix well. Add this egg mixture to rice mix and stir well.
Pour into serving bowl and top with ground cinnamon
Of course you can add raisins by choice.
