PHX: carrot cake recipe and good eats?
Was at Scottsdale Fashion Ctr today killing time before catching a movie at Camelview when I caught a glimpse (OK, several glimpses!) of Paradise Bakery's carrot cake, which I consider the best I've ever tried. Their carrot cake is pretty much all chunky filling, with minimal cake and a layer of cream cheese frosting on top. I pretty much scrape most of the icing off as the cake is perfectly delicious on its own!! Would like to know if someone can post a recipe that will yield this very carrot cake?
BTW, as it was midday, I was able to fight the temptation to buy a slice to go... I wish I could say the same about the brownies, Germanchokolatekake creation, and a few Endangered Species chocolate medallions I had tonight!

p.s. I would like to add that I'm allergic to bananas, peaches, corn (cornstarch is particularly painful!), and cucumber, among other things, so please offer a substitution ingredient if your recipe calls for it/them.

Carrot cake is something that I love, but it's so dense that I rarely make or buy a whole cake. Costco has good cake.

Can anyone recommend a natural bakery in the PHX and local areas that sells fantastic dense carrot cake (a la Paradise Cafe and Bakery)? I don't doubt that Costco sells great carrot cake, but I'm trying to avoid preservatives and other additives. In the meantime, I will continue to practice at home, although I hate throwing wonderful shredded carrots away bec. of failed attempts :( (Failed only bec. I've tried to substitute other ingredients for butter and oil... has anyone tried using coconut oil in carrot cake preparation?? Which extra virgin olive oil brands are good for baking without leaving a huge dent in my wallet? I've been disappointed by my latest baking attempts using my current EVOO... perhaps it's time to toss this one out).
