Basic cooking

my boyfriend wants me to take a course on how to make deli style sandwiches--corn beef, roast beef. He says it's in the meat. Where can I do this? Also where can take basic cooking classes?

    Not sure about this, but perhaps if you called Breadline, they would arrange something with you.

    The best place in the area for cooking classes is L'Academie de Cuisine, in Bethesda.

      I'm taking my first cooking class in August at the Sur La Table in Pentagon City. The courses sound good and hands-on so I'll let you know how they go.

      But I've never seen a sandwhich making class listed in any of the local cooking schools.

      Are you looking to learn to make the actual meat (corn beef, turkey, roast beef) or construct a sandwich?

        If you're ever looking for a buddy to go, let me know. I like cooking classes.

        And of course, report how it was - I don't want something as serious as L'Academie but I do enjoy a good class and am glad Pentagon City has 'em.

          I'm taking the Summer Fruit Tarts and Pies class on August 11th. There still might be space available. I think its around $60...all hands on and lasts 2-3 hours.

          I'm really excited! I've never made a pie from scratch before but after seeing Waitress I was inspired (and my boyfriend begged me to learn how to bake pies! lol)

          I'll let you know how it goes. If I like it I imagine I'll take some other classes so I'll let you know. Their website usually shows what classes will be offered for the next few months.

            yeah, i checked it out.
            there's one where they make a grilled portabello, nectarine and tallegio sandwich...yum, much?!?! heh

            Pies and Tarts sounds cool, but I hate to bake.

              Oh gosh you have never made a pie from scratch before... wow it is so different living in the city, my family wouldn't believe this... you really don't need a class for this, it is soo easy, especially if you have a food processor with a dough attachment, but I am sure it would be fun. Can I recommend making sure your cooking class is a hands on one, also for that price you could probably find on the washington post list someone that would come to your house if you prefer. Oh and if you get serious about baking get the Martha Stewart baking cookbook if you really want good baking recipes it is excellent, mine is already stained up and I just got it this Christmas.

                They say its very hands-on.

                According to my Mother its all about the crust. She makes delicious pies and I'm sure she could show me but I wanted to do something to meet new people and learn some baking skills. I think I'm a very good cook...not so good when it comes to baking from scratch though. :)

                  I've taken hands on classes before thru Viking Culinary Center outside of Philly, so that's what I'd want here.

                  I've recommended the basic knife skills class to my roommate - I think everyone who is just starting to cook should take one like that.

                  And for baking...I like to cook and chop things...baking has always seemed boring, probably because it's an exact science and I stink at Science!

                    My sister has also taken and enjoyed a number of the Viking courses in Atlanta.

                    Supposedly they have a store and teaching kitchen in Tysons. Can anyone confirm?

                  I wasn't terribly impressed with the 2 classes I took at Sur La Table at Pentagon Row. I took a Wok cooking class and the recipes just weren't that good and I took a seafood one that ended up just being a demo, no hands on. Hopefully yours will go well.

                  If you are really into pies I would recommend the Pie and Pastry Bible by Rose Levy Beranbaum. She has recipes for about 1000 different crusts and it tells you why they are different and what the difference does for your pie.

                  If you get into baking in general I would recommend Cookwise by Shirley O Corriher. She goes much more into the food chemistry and then gives you the recipe and an explanation on what is critical in the recipe.

                  Btw Jeserf I just saw that you posted about Copenhagen and said that you lived there for awhile (AND referenced Riz-Raz!!). I studied abroad in Copenhagen!!! Maybe we should take a cooking class together! lol

                There is a huge list of places that teach cooking classes on the Washington Post website (like 20 pages worth arranged by type of cuisine). Anywhere from big demonstration classes to private instructors that come to your home. Perhaps try there?

                  I tried to resist the urge, but I just can't. Tell him if he really wants a sandwich to go make it himself. Why not make him go to the meat curing and you can take the cooking classes you really want to take ;)

                  Most county school systems have an adult-education arm, often featuring inexpensive short several-evening courses covering any number of practical topics. Cooking is a big favorite, from general courses such as you mentioned, to specialized styles. I used to teach a few, and found manageable-size groups of eager students. You'd get all you want right there - call your local school department's main office and ask about recreation classes for adults.

                    Tell him to buy Charcuterie: The Craft of Salting, Smoking, and Curing by Michael Ruhlman. I've always wanted to try this and there is no good excuse why I haven't yet. Let me know how it goes.

                      The Joy of Cooking has great recipes for deli-style sandwiches, and their Russian Dressing is to die for. Be sure to use very fresh parsley, and leaves only, remove all stems.

                      There is also a fine recipe for roast beef eye of the round, the perfect cut for sandwiches, and for boiled corned beef. For better than store-bought, corn a brisket yourself. There are recipes for that on this board, mainly derived from the Cook's magazine recipe.

                      Get some good bread and once you have had a sandwich made with home-cooked cold cuts you will never go back. It is indeed in the meat, and homemade is just lightyears beyond even the best store-bought.
