Risotto 101


I love a wild mushroom risotto in restaurants. I've tried to make it a long time ago and it was a failure.

Does anybody have good suggestions, beginner recipes, or tips?

  1. search the site for mushroom risotto to find a basic recipe. However, I don't use dried mushrooms but rather I saute fresh in olive oil and then add them at the end of cooking the risotto right before the cheese.
