Bear Cafe in Woodstock/Bearsville, Rosita's in Kingston come to mind

Don't miss Danzante Mexican in Kingston, just at the start of Broadway. The real deal, owned, run, and patronized by Mexicans, great food and a very extensive menu, including 3 different types of homemade flan.
