what do i do with 18 carrots?

just got a delivery of a pun-ny party invite that involves 18 very lovely carrots - tops and all....

now what?

tell something fun to do with them....

    The most fun you can possibly have with carrots is make barfi.

    Yes, it's called barfi (also spelled burfi). And yes, it tastes MUCH better than it sounds.

      Moroccan Carrot Salad. There re many vairations on the dish but it is wonderful. For the 1 tsp. cumin in the dressing I find that toasting your cumin seeds in a dry skillet and grinding tghem in a mortar gives you a much richer flavor .

      You will need 1 1/4 lbs carrots, peeled, tops removed, cut into quarters and then into sticks. Cook in salted water 10-15 mins. until just tender and drain well.

      Heat 4 Tbs. EV olive oil in a large skillet and heat. Add the carrtos, 4 crushed garlic cloves, the ground tsp. of cumin, S&P and saute until the garlic begins to take on a nice gold color. Chill and just beforre serving sprinkle with the juice of half a lemon.

              Make Marcella's Braised carrots. Absolutely amazing, and I've never liked cooked carrots before.

                A simple marinated carrot salad- julienne the carrots with a mandoline, and marinate in sweet sushi rice vinegar, adding a touch of chili for heat.

                    I make a simple carrot soup -- sweat some onions in a little olive oil, add roughly chopped carrots and enough chicken broth to cover, bring to a boil and simmer about 20 minutes covered, then add garam masala and a squeeze of lemon juice, and blend. Yum! I usually make it with meatloaf, for some reason.

                      Don't carrots lend themselves really well to soup?? They can stand up to almost any sort of spicing, and the color is gorgeous.

                      roast them

                      toss them in some olive oil, salt and pepper

                      roast until fork tender and carmalized

                        Roasted carrots.......mmmmmmmmmmmmmmmmmmm

                        They're especially yummy if you happen to be roasting a chicken...just cut your carrots in chunks, salt and pepper them and throw them in the roasting pan beside the chicken...onions in there are great too...and when you baste the bird..make sure to baste the veggies as well

                          Carrot cake- with cream cheese icing
                          Carrot juice- carrots make a nice sweet juice- refreshing in the heat

                        They sound so pretty. Something fun...I've seen flower&vegetable arrangements that look stunningly beautiful. Otherwise I agree that roasting them whole would show them off best.

                          I have to guess...wedding shower invitation?

                          BTW...carrot slaw would be my suggestion. Basically cole slaw with more carrots than cabbage. Very nice in the summer.
