what do i do with 18 carrots?
just got a delivery of a pun-ny party invite that involves 18 very lovely carrots - tops and all....
now what?

Roasted carrots.......mmmmmmmmmmmmmmmmmmm
They're especially yummy if you happen to be roasting a chicken...just cut your carrots in chunks, salt and pepper them and throw them in the roasting pan beside the chicken...onions in there are great too...and when you baste the bird..make sure to baste the veggies as well

I make a simple carrot soup -- sweat some onions in a little olive oil, add roughly chopped carrots and enough chicken broth to cover, bring to a boil and simmer about 20 minutes covered, then add garam masala and a squeeze of lemon juice, and blend. Yum! I usually make it with meatloaf, for some reason.

Moroccan Carrot Salad. There re many vairations on the dish but it is wonderful. For the 1 tsp. cumin in the dressing I find that toasting your cumin seeds in a dry skillet and grinding tghem in a mortar gives you a much richer flavor .
You will need 1 1/4 lbs carrots, peeled, tops removed, cut into quarters and then into sticks. Cook in salted water 10-15 mins. until just tender and drain well.
Heat 4 Tbs. EV olive oil in a large skillet and heat. Add the carrtos, 4 crushed garlic cloves, the ground tsp. of cumin, S&P and saute until the garlic begins to take on a nice gold color. Chill and just beforre serving sprinkle with the juice of half a lemon.
