Getting more adventurous with sausage

Hi Guys,

I've always been comfortable with the old Oscar Mayer weiner on a white bun with French's mustard and some relish. At first I only liked the hot dog boiled but now I can eat them grilled too.

However, I know there's a whole world of other sausages out there and lots of ways to eat them.

Can anyone give me some tips on how to expand my horizons? How can I get up to the blutwurst-level exotica without grossing myself out first?

      merguez(a northern African lamb sausage) with a bit of Dijon on a toasted baguette.

      Brats of all sort (Berlin bratwurst is very garlicky)

      Italian sausage with grilled onions and peppers on a hoagie roll (classic little Italy street food)

        Great tips Rustcat and Kelli2006. I was at a cookout yesterday and I mustard (pun intended) the courage to have a calabrese. I even put spicy German mustard on it.

        At first I was kinda grossed out by the casing that had come from the colon of some animal. GROSS! However, after took a few small bites, it started tasting pretty good.
