question re. cuisinart canister ice cream makers [Moved from Home Cooking board]

I've made one batch of ice cream, washed out the canister and put it back in the freezer. It's cold but not frozen. How long do I need to leave it in there before I can use it to make the next batch of ice cream?

  1. Several hours. It doesn't pay to rush this step. It needs to be rock solid before you start your next batch or the ice cream won't set up. I would say minimum 8-12 hours depending on how cold your freezer is set. I always leave mine for 24 hours before using it again.

    1. Seconded on "at least 24 hours." It helps enormously to have a second canister - we always have at least one of our two in the basment deep-freeze for exactly this reason.

      1. It needs to be frozen. Really frozen. I would go with the 8-12 hour suggestions. I either put it in the night before or in the morning before I go to work to use that night. Also, don't try to do two batches of ice cream right after each other. You'll think it's cold enough for the second batch, but it's not. I've made that mistake once and only once.
