Specialty Cooking Classes in the Triangle
I'm interested in expanding my cooking skills and was wondering if there is anywhere that offer cooking classes in the Durham/Chapel Hill/etc. area, other than Southern Season. I have the basics down, as I was a line cook for a hotel for a couple of years. I'd love to learn more, however. I'm not looking to go pro (I know better), but love to cook as a hobby.
Regional specialty classes, such as cuisine of Italy, India, China, etc.. would be great. Classes on pastries, or any other baking course for that matter, would also be useful. Do any of the technical colleges around the triangle have fun cooking courses worth taking?
Any feedback would be welcome. If there's already a thread on this, please point the way. My searches didn't turn up a whole lot. Thanks!

I actually have not attended one of his classes, but I know many people who have, and they thoroughly enjoyed the experience. I hope this helps.

Carrboro's Century Center offers Tuscan Cooking & Vegetarian. I took Vegetarian, it was great; we cooked Indian, Indonesian, Italian cuisines, the class loved it.

I'd be interested in the Tuscan cooking class. I'm looking at their website, and it says "Wednesdays, June 6 - July 18" and the cost is $178. Do you know if this means $178 for 7 3-hour sessions? If so, that might actually be worth the price.

My sister took Caroleena's Tuscan class, and yes it is a 3 hr session,as you have dinner, she really enjoyed it.

I took a knife skills class at Chez Bay that was pretty fun, albeit definitely geared for amateurs. I'm pretty sure they've got a range of classes for different skill levels, however.

It would involve driving to Cary, but the cooking classes at Capri Flavors are wonderful. Titina is a great hostess and the classes are a lot of fun, culminating in a big family-style dinner where you get to enjoy what you cooked.

I enjoyed the series I took at Lan's Cooking School (Chinese/Asian cooking). I, and several friends, took the beginning course. I would like to take the intermediate course someday (Thai!)

Doubt there's a website - Lan's is kind of "old school". In a good way. My husband and I took three series of cooking classes with Lan almost 14 years ago and they were great. I have her recipes in a folder and still make them frequently. She's an interesting character. Her shop has cool stuff - check it out.
