So, I opened a lovely container of Phillips jumbo lump pasturized crab meat from Costco last night to include in some Vietnamese summer rolls in lieu of shrimp. Will it still be good tomorrow night? I have a sushi craving for tonight and would like to convince my husband that we can use it tomorrow! TIA

Sure. I've made stuff with the same crab meat and have leftovers for a few days.

Thanks for both of your answers. Fortunately, my husband, who (rightly so) is wont to waste, didn't even ask about it. Unfortuanately, the sushi we went out for was absolutely lousy. So, whatever I do with the rest of the crabmeat tomorrow night is bound to be better!

Of course it's fine. There's a very popular dish in New Orleans called Crabmeat Ravigote. The restaurants make it with fresh crabmeat of course (I hope) but the origin of the dish is as a use for day-old crabmeat that you certainly don't want to waste. The French verb "ravigoter" means to invigorate, enliven or refresh.
The crabmeat is served as a salad dressed with a sauce made of a mayonnaise base and green bell pepper, scallion, pimento and anchovy. Sometimes a little Creole mustard and other spices depending on the cook. Heaped on a bed of lettuce.
The lively spices "refreshed" the crabmeat. It's a great recipe for any canned crabmeat that doesn't taste quite as good as you hoped it might.
