There's a very popular dish in New Orleans called Crabmeat Ravigote. The restaurants make it with fresh crabmeat of course (I hope) but the origin of the dish is as a use for day-old crabmeat that you certainly don't want to waste. The French verb "ravigoter" means to invigorate, enliven or refresh. The crabmeat is served as a salad dressed with a sauce made of a mayonnaise base and green bell pepper, scallion, pimento and anchovy. Sometimes a little Creole mustard and other spices depending on the cook. Heaped on a bed of lettuce. The lively spices "refreshed" the crabmeat.
