extra sauce suggestions

I made a tomatillo cream sauce for some enchiladas last evening and have a ton left over.

Any suggestions on what I can do with the remainder? Its tangy and a little spicy.

  1. Pour over an omelette stuffed with avocado, black olives, and a good mexican cheese i.e. cotija

    1. Put it over baked chicken and rice. The omelette idea sounds good too.

      I wonder if it would work with biscuits, a la 'biscuits and gravy'?
