Edible Boston - What's on the cover?!?

Just got my copy of Edible Boston (Summer 2007) in the mail. What is on the cover? I am so curious!

    huitlacoche. It is a fungus that grows on the corn. Sometimes called the "corn truffle". There is a whole article in the mag about it. Sounds yummy!

      Also called "corn smut". I love the stuff. Have only had it canned, not fresh. Tu Y Yo in Somerville has a huitlacoche and chicken dish, and some huitlacoche crepes at Brunch.

        I'm actually beginning to see it more and more around here. In its heyday, Bomboa used it too--looks like 33 Resto is finally going to use that space, for better or worse...

        (Of course the last word on huitlacoche can be found on thesneeze.com, in Steve Don't Eat It!)

          I've had huitlacoche quesadillas at Cinco de Mayo in East Boston- pretty good! It's the first time I've had it so I can't say how it compares or if it's canned. But I'd try it again!
