A few years ago, my husband and I ate at Jaleo in DC and had a wonderful and memorable bowl of beet gazpacho. Does anyone have that recipe, or any beet gazpacho recipe? How would you attempt to recreate?
Sounds like a fancy name for borscht, Russian beet soup.(ingenious that they would call it beet gazpacho though! what a way to sell beet soup!)
Agreed. I only wonder if they used raw beets or cooked, as with borscht? It was really incredible.
