Saturday, 8am to 2pm. Most of the best purveyors are not at the much smaller Tuesday market.

The Saturday market does tend to get busy, however it is very impressive and should not be missed! Just go early... I believe it opens at 8am, although I've heard that its even open before that.
No need to dress up, just crawl out of bed, throw some clothes on and get down there for a cup of Blue Bottle Coffee, breakfast at any number of vendors, and a beautiful stroll through the market. I can't think of a better way to get my weekend started!

Saturday's outdoor farmers market is PACKED! If you're into crowds, go then. If not, avoid it. The farmers market on Tuesday is more managable.
The actual Ferry Building Marketplace is such a wonderful place for foodies. Love it.

Actually the only reason to go there is the Saturday morning market. If someone is just visiting the city, the Tuesday market isn't going to do much for them ... fine for locals that want to pick up a few veggies for dinner, but not very interesting.
As others have said, to avoid crowds go when the market opens on Saturday
