Does anyone have any opinions on the best Marsala wine to use for cooking? Thanks.

I used to use cheap marsala but now I use a much better brand called Florio and it is excellent for cooking. You can buy sweet or dry marsala although most recipes call for dry. It is not expensive probably about $11-12 for a bottle.

Thanks Paul, the name sounds familiar--I think my Italian cooking teacher recommended it. However, I haven't been able to find it. May I ask where you usually buy it? Thanks in advance.

You should be able to buy Florio in most liquor stores. I buy it in the local supermarket. It's a popular brand.

I would agree with C. Hamster, I live in the Boston area and all of the liquor stores carry Florio. Whatever you do, try not to use Pastene.

I live in Boston, also and my Stop and Shop carries it. Most places that sell wine should also sell marsala.

Agree that you should NOT use Pastene! Like paulgardner says, buy a good bottle. It keeps well, since it's a fortified wine.
