I just bought some beautiful golden and grey oyster mushrooms from the farmer's market. What are some good ways to cook them while preserving their beautiful delicate taste? I would perfer to stay away from cream sauces.

Lightly brush with Olive oil then grill them, sprinkle with S&P, lemon juice and just a touch of balsamic vinegar. One of my fave appy's to make. Some time after I grill them I make a balsamic vin for salad and just top my salad with the warm shrooms. This would be dinner :)
