How fun! You'll be a pro by tomato season!

I know Mississippi Market just held a seminar on making your own mozzarelle cheese--if none of the other 'hounds know who carries rennet, perhaps call MM to see if they do?

Good luck! I hope you post about your experience on the home cooking board. I would really love to know how it goes for you.

Come back and report on how it works! I had trouble finding non-ultrapasteurized milk and never got satisfying cheese. But I'm thinking of giving it another go. By the way -- almost all organic milk is ultrapasteurized, even if it's labeled just "pasteurized."

Might be worth checking with some of the farmer's market vendors and seeing if anyone could be a raw milk source. (Is raw milk legal here?)

I found a reference to a place where you can buy it, as long as you do so at the farm itself and bring your own container. Will report back later with the source.

According to the U Extension, "milk, cream, skim milk, goat milk, or sheep milk occasionally secured or purchased for personal use by any consumer at the place or farm where the milk is produced" may be purchased raw. The web page I looked at gives further info on safety, etc.
