Looking for the ultimate carrot cake recipe

I am pretty new to baking and have never tried my favorite...carrot cake. I guess I just don't want to be disappointed in my own carrot cake...that is serious ;-). Any favorite recipe you suggest for my first try? Thanks!

  1. What type? Light or dense?Do you like a lot of "junk" in it like pineapple, nuts, etc? (revealing my own preferences...)

      Hi! Well I prefer rich cakes. Nuts sound good but whatever is your favorite...I would love to compare a few...Thank you!

    2. Silver Palette has the best recipe ever!!!! If yu can't find it post a note and I'll post a link for you. It is quite a project and worth every second of preparation!! Enjoy and let us know what you think.

        I second this recommendation--the Silver Palette cake is delicious. But don't make it if you want to continue to harbor any fantasy that carrot cake is somehow healthy :-)

      2. This one goes together easy. My one recommendation is to use a food processor to shred carrots, you really don't need any blood in this :)

        Spicy Carrot Cake
        This may violate the laws of physics, but the cake weighs more coming out of the oven than it does going in.

        1 1/2 cups lightly packed brown sugar
        3/4 cup vegetable oil
        4 eggs
        1 1/2 cups flour
        1 1/2 cups oats (quick or old fashioned, uncooked)
        1 tablespoon baking powder
        1 teaspoon salt (optional)
        1 teaspoon cinnamon
        2 1/2 cups shredded carrot
        3/4 cups raisins
        3/4 cups chopped nuts

        Preheat oven to 350oF. Grease and flour a 12-cup fluted tube (Bundt) pan.

        In large bowl, combine sugar and oil, add eggs, one at a time, beating well after each addition. In medium bowl, combine remaining ingredients. Add to sugar mixture, mixing just until dry ingredients are moistened. Pour into prepared pan.

        Bake 45 to 50 minute or until wooden pick inserted in center comes out clean. Cool 10 minutes, remove from pan. Cool completely on wire rack. If desired, frost with cream cheese frosting.

        1. Thank you both...I ended up really in the mood for baking something about 45 minutes after posting this! So I went ahead and read some recipes online and came up with my own. I haven't tried it yet as it was late when I was done. But my fiance and I can't wait until tonight to try it (we are both at work now ;-)). I will report back with the results and recipe if it was good. I will keep your suggestions and report back when I make them. Have a great cooking day today!

            Experimental recipe came out great...if you want to try:

            Yomy B's Carrot cake with Mascarpone Frosting

            1 cup sugar
            2 eggs
            2/3 cup canola oil
            1 cup flour
            1tsp baking soda
            1 tsp baking powder
            1/2 tsp nutmeg
            1/2 tsp cinnamon
            1/4 tsp ground ginger
            1/4 tsp allspice
            1/4 tsp cardamom
            2 cups carrots
            1/2 cup chopped walnuts

            Mascarpone Frosting

            8 oz mascarpone
            6 tablespoons butter
            1 1/2 cups powdered sugar
            Cream sugar and butter then add mascarpone and mix until fluffy or until it reaches your preferred consistency.

            This will make a small cake for a 9 x 9 cake pan.

            Preheat oven to 350 degrees F. Grease pan.

            Combine sugar, oil, and eggs with a mixer in a large bowl. Mix dry ingredients. Add to sugar mixture, and mix until everything is incorporated. Add carrots and nuts and again mix slightly. Pour into pan. Bake about 45 minutes or until fork comes out clean from center. Cool completely and frost....

          2. I know you have already settled on something but my friend told me this was the best carrot cake she had ever eaten - Tropical Carrot Cake with Coconut Cream Cheese Frosting from epicurious - has anyone tried this?

              i"m not a huge carrot cake fan, but one of my friends made this one for a birthday last year and it was quite good. I definitely prefer the macadamia nuts over the traditional walnuts.

              2. I got this from a friend many years ago - it's my all time favorite carrot cake:

                Carrot Cake

                1 1/2 cup flour
                1 cup sugar
                1 tsp baking powder
                1 tsp baking soda
                1 tsp cinnamon
                1/2 tsp salt
                2/3 cup vegetable oil
                2 eggs
                1 cup grated carrot
                1/2 cup crushed pineapple with syrup
                1 tsp vanilla
                1 cup chopped walnuts or pecans

                Cream Cheese Frosting
                1 3 oz package cream cheese
                1 Tablespoon butter
                1 tsp vanilla
                2 cups powdered sugar
                1/2 cup chosed walnuts or pecans

                Mix together all cake ingredeints until moistened. Pour into 9 x 9 x 2 inch pan and bake at 350˚F for 35 minutes.

                Cool in pan for 5 minutes. Turn out of pan onto wire rack and cool completely. Frost.

                Frosting:

                Mix cream cheese, butter and vanilla until smooth. Gradually mix in powdered sugar - 1/2 cup at a time. Fold in nuts. Frost cake.

                  Here's my recipe, it's been a hit everywhere I've brought it. Carrot Cake With Cream Cheese Frosting

                  2 cups all purpose flour
                  2 tsp. double acting baking powder
                  1 1/2 tsp. baking soda
                  2 tsp. cinnamon
                  2 cups granulated sugar
                  1 1/2 cups vegetable oil
                  4 large eggs
                  2 cups finely grated and peeled carrots
                  1-8 ounce can crushed pineapple
                  1 cup coconut sweetened and flaked
                  1/2 cup chopped walnuts

                  Cream cheese icing
                  3-8 oz. packages cream cheese softened
                  2 sticks butter
                  1-2 tsp. vanilla or to your taste
                  2 2/3 cups confectioners’ sugar

                  Into a large bowl sift together the flour, baking powder, baking soda, cinnamon and then stir in the granulated sugar, the oil, the eggs, the carrots, the pineapple, the coconut, and the walnuts. Divide the batter between 2 greased and floured cake pans and bake the layers in a preheated 350 oven for 35-40 minutes or until a tester inserted in the middle comes out clean. Cool on a rack and after a few minutes turn the layers out and let cool completely.

                  For the icing:
                  In a bowl with an electric mixer beat together the cream cheese, butter and the vanilla until the mixture is fluffy and then add the confectioners sugar gradually and beating until it’s all incorporated and smooth.
