i promised to make my mother a coconut cake for her b-day, I have since forgotten and loaned my CI cookbook out to a cousin. Does anyone have this recipe and could maybe post it for me? (oh and her b-day is the 25! yikes!)

A coworker recently brought another one of her famous baked good to work, and this time it was in the form of a Coconut Cream Cake...it tasted amazing and I dont even particularly like coconut...but it isn't for the faint of heart (literally.)

    Check it out here- http://creampuffsinvenice.ca/2007/06/...

P.S. I realize you said you needed it for the 25th, but I thought you, or others would like this anyways!

"...my CI cookbook..." Are you referring to Cook's Illustrated? It's in the 2001 March/April annual. Here are the ingredients as listed. Do you need the directions?

        ingredients for cake:
1 large egg plus 5 large egg whites
        3/4 cup cream of coconut
        1/4 cup water
        1 teaspoon vanilla extract
        1 teaspoon coconut extract
2-1/4 cups (9 ounces) cake flour, sifted
        1 cup suar
        1 tablespoon baking powder
        3/4 teaspoon salt
12 tablespoons (1-1/2 sticks) unsalted butter, cut into 12 pieces, softened, but still cool
1 cups packed (about 8 ounces) sweetened shredded coconut

        buttercream ingredients:
        4 large egg whites
        1 cup sugar
        pinch salt
1 pound (4 sticks) unsalted butter, each stick cut into 6 pieces, softened, but still cool
        1/4 cup cream of coconut
        1 teaspoon coconut extract
        1 teaspoon vanilla extract
