Collards.... and pizza???

As much as I love to try new things, I was a tad skeptical when a friend pushed her "collard" pizza on me a couple of nights ago. However.... it was soooo savory. The collards were chopped and highly seasoned, and the other primary topping was feta cheese. (she said she wanted to experiment instead of using typical spinach.) I know I live in the South and all, but this was a new one for me. Just thought I would pass it along in case anyone else was thinking about substituting spinach one day.

  1. Sounds good to me. I'd add a lot of garlic and use a little mozz instead of the feta. Heck, since I begrudgingly admitted that I liked a Hawaiian pizza, I'll try anything once.

    1. Heck, I love spinach and feta, so why not collards and feta! I'd eat it!

          Broccoli rabe on pizza or in a sandwich is pretty common place esp here in N.Y.more turnip green than broccoli.I read somewhere that mustard,collard,and cabage was consumed at a greater qualityAnyway maybe with cheddar or Velvita and a NeHi(?) or peanuts and cola.
