I'd make a Thai-inspired curry meatball dish. I'd mix the turkey with breadcrumbs, water or broth, garlic, fish sauce, a little peanut butter, toasted sesame oil, fresh basil and cilantro, salt (easy because of the fish sauce) and black pepper. Roll into balls.and refrigerate.
Saute an onion and minced ginger in a little oil. Fry some curry paste in the onion mixture. Add coconut milk and a little fish sauce, maybe a bit of brown sugar. Add meatballs and allow to simmer till cooked through. Finish with lime juice and chopped fresh basil. Serve with steamed jasmine rice and stir-fried peppers and snap peas on the side.
