        <content>I had some wonderful rice pudding at an Afghan restaurant a few months ago.  My mom said something about coconut milk rice that a member of her church's mother (from India) made, but it's not rice pudding.  My basic rice pudding recipe is:

4 c. milk, scalded
1/3 c, rice
1/3 c. sugar
1/4 t. salt
dash nutmeg, cinnamon, or dried orange peel

Bake 2 to 2 1/2 hours, until rice is tender and milk is creamy.

Here's my question:  Will this recipe work if I substitute canned coconut milk for part of the milk?  Or, if not, does anyone have a good &amp; simple recipe for rice pudding made with coconut milk?</content>

To get the Afghan flavor I'd use freshly-ground cardamom, and maybe rose water.

      <content>I make mine with part coconut milk and part cow's milk.

2 cans coconut milk (14 oz. or whatever the standard Campbell's-Soup-sized can is)
1 cup cow's milk
3 cups water
1 cup broken rice (gao tam) or jasmine rice
2 cups sugar
pinch salt

Mix all the above in a rice cooker and set to the lowest setting ("porridge", if you have it) -- alternately, if you have no rice cooker, do in a stovetop on low heat, which takes about an hour.</content>

      <content>Nope, goes in the oven.  You're supposed to stir it periodically for the first hour, and it bakes at a pretty low temperature.</content>

      <content>Last week I made a delicious rice pudding based on a recipe I had clipped from a magazine.  
Ingredients:  Coconut milk, milk, 1 vanilla bean, poppy seeds, sugar, short-grain rice (I also added a pinch of salt).  When cooked, stir in zest of 1 lime and some heavy cream.  Cool.  Serve with fresh mango.  
Delicious and refreshing!</content>
