Requested Red bell Pepper Chutney

This is my mother-in-laws recipe. It is a good one.

Joyce Grovers Red Pepper Chutney
4 cups

4 large red bell peppers in ½ “ dice
2 jalapeños, finely minced
4 cloves garlic
1 ½ c. cider vinegar
1 c. light brown sugar
1 c. granulated sugar
1 c. golden raisins
½ c. crystalized ginger

Place all ingredients in a microwave safe casserole. Cook uncovered on high until thickened ( about 45 minutes). Cool slightly, spoon into jars and refrigerate.

Note: I cook this on top of the stove until thickened, ladle into sterile jars, seal and turn upside down for an hour or so. They seem to seal adequately so I store on cupboard shelf after checking

    1. well, that sounds intriguing. What do you use it with? It's pretty sweet?

          It is nice with ham. It is also rasrt ith crea cheese on a cracker.
