Cuban Sandwich- Help me floridians

My wife moved from S Florida to San Francisco and apparently you can't find a decent Cubano in this area. So I will make them instead. What kind of Ham, Mustard, pickles and cheese? And what is a good pork recipe. I want them to taste as much as possible like the ones in south Florida.

  1. Having moved to Western Canada from Miami many years ago, I understand the need for a good Media Noche. I hope someone can recommend a good substitute for the soft sweet Cuban bread. I have just used an Italian or French bread with plain yellow mustard, dill slices and Swiss or Gruyere cheese, along with the roast pork, pressed in a sandwich press or cast iron skillet pressed down with a brick.

    I marinate a cheap 4-6 pound pork shoulder roast overnight in:
    Minced garlic
    1 tsp ground oregano
    1 tsp ground cumin
    1 cup dark rum (optional)
    1 cup fresh orange Juice
    1 cup fresh lime juice
    3 T. olive oil
    2 tsp salt
    1 tsp black pepper

      Forgot to mention the ham -- have had to substitute the Cuban ham with boiled ham slices. Forgive me, Little Havana -- Mickie

    2. One issue is the bread. Regular French baguette will not do, the crust is too crisp. There is a good recipe for Cuban bread in Steve Raichlen's Miami Spice.
