Professional Knife Sharpener?
Where I come from, you gotta give your chef-knife to a professional sharpner every couple of years (in addition to your occasional-home-sharpening). Do people do that here, or just get a new knife? Where can one get a good old chef knife properly sharpened, perferably around morningside heights?

the broadway panhandler on 8th and b'way do it well. not near morningside heights,but good nonetheless.

There is a woman who has a stall in Chelsea Market on weekends, right outside the home goods store. We've had her sharpen pretty much every knife in our place a few times now, and she does a good job.

There is a recent thread on this which inlcudes the hone # for Samarui Sharpening (Chelsea Market). You might want to do a search of this site. Maybe someone will post the link for you . . .

I have also used Samurai. Drop off and pick up in about an hour. It was better before Markt moved. You could have beer and mussels while you waited!

The woman's name is Margery Cohen. I believe she's there Wednesdays and Saturdays. I've used her. She does a good job and is not very expensive.

If you live on the Upper West Side, keep an eye out for Mike in the green truck. You can hear him clanging. He charges something like $4 a knife, and he's been doing it forever.

Please please please do not give your good knives to Mike in the Green Truck. I made this mistake last year and had the knives returned with half the edges sheared off and one tip smashed. At the knife skills class I took recently at ICE, the teacher recommended using either Westphal in the west 30s (they may have closed) or using the mail order services of Holley Knives in Connecticut:

Whatever you do not give good knives to those guys in the green truck..I typed this twice because I do not want others to have good knives ruined.

Iirc, in the previous thread about knife sharpening, someone mentioned that Westphal is currently closed but will be moving to a new location.

Thank you for the tip about holleyknives. I have been trying to figure out where to get my knives sharpened because I don't trust any of the local places. I just ordered the box from Holley and should have sharp knives in less than a week. Great advice.

Broadway Panhandler (65 E. 8th Street) sharpens knives... takes a couple of days though.
