Ideas/recipe for an omelette

With no meat or fish tonight, but lots of eggs, thinking about making an omelette for 2 for dinner. Very seldom make them. I have eggs, goat cheese, spinach, onions, garlic and the usual suspects in the cabinet and refrigerator. I would be grateful for any ideas.

    I think everything you've written sounds great together. Saute your onion and garlic, then throw in the spinach until wilted. Add that to the omelette along with your goat cheese.

    If you've got a ton of veggies, think about making ratatouille. My dad swears that in an omelette, it's the best thing he's ever had.

      use exactly the ingredients you listed and add kalamata olives. maybe some oregano, too. sliced tomatoes on the side if you have them.

      Wilt the spinach in the pan with the garlic and some olive oil before adding the eggs etc.
