Smoked Salmon ideas?

Ive been addicted to smoked salmon lately and am getting tired of the two ways to eat it that I enjoy -
1. simply with cream cheese and onions
2. over pizza with cherrystone clams

any other recommendations from fellow smoked salmon fans?

I love smoked salmon in anything involving eggs - with cream cheese and green onion as an omelet filling, beaten up for scrambled eggs or a frittata, with cream cheese (again) or hollandaise between a muffin and poached egg as a Salmon Benedict. I've also had a very elegant brunch with salmon/cream cheese-filled crepes served with eggs - I think there was some chopped fresh dill involved there. And as a variant on a standard New England meal, you could mix the salmon and some dill into a rich white sauce for creamed potatoes, served alongside buttered new peas.

      Okay, I'll admit it: I'm just eaten up with envy at anyone who claims to have TOO MUCH smoked salmon!

        Those ideas sound absolutely delicious.

        I love it on freshly baked pizza dough, would it go with a tomato sauce you think? One combo I made once was with grey poupon and sweet potatoes on pizza. weird but amazing.

      2. Super, fast breakfast. Beat two eggs with a bit of milk, add some chopped onion, a bit of chopped pepper, preferred herbs and seasonings, and some smoked salmon, trout, whitefish, kippers or whatever. Nuke for two minutes. Instead of onion and pepper I sometimes use corn or peas.
