Meatloaf made with gingersnaps?

My sister and I were discussing some things my mother used to make when we were kids. One of these meals was a meatloaf made with gingersnaps used as the filler instead of breadcrumbs. We think she used beef broth as the 'sauce' . As I recall, it was actually pretty good. Does anybody else recall such a meatloaf. Mom is first generation Irish American, and we did not grow up on the most adventurous food, so I am wondering where she came up with this!

  1. At first that sounds a bit different, but when I think of sauerbraten, of course you can use ginger snaps with beef. I wonder if you could make the meatloaf with crused gingersnaps, and make the traditional sauerbraten (which has the ginger snaps in it )sauce for it?
    It actually sounds very good.

    1. Actually, it sounds good. She probably got the recipe off a cookie box. I looked, and here is a recipe:
