Meatloaf made with gingersnaps?
My sister and I were discussing some things my mother used to make when we were kids. One of these meals was a meatloaf made with gingersnaps used as the filler instead of breadcrumbs. We think she used beef broth as the 'sauce' . As I recall, it was actually pretty good. Does anybody else recall such a meatloaf. Mom is first generation Irish American, and we did not grow up on the most adventurous food, so I am wondering where she came up with this!

At first that sounds a bit different, but when I think of sauerbraten, of course you can use ginger snaps with beef. I wonder if you could make the meatloaf with crused gingersnaps, and make the traditional sauerbraten (which has the ginger snaps in it )sauce for it?
It actually sounds very good.
