I like them chewy, rather than fluffy or soft. So I like the ones made with beans, tempeh, and grated raw veggies like carrot or (squeezed) zucchini.
I don't mind a bit of grains in there as a binder - usually quinoa or rolled oats - but not too much, because I don't want them too carby.
Nuts are good in small quantities, otherwise the burgers become really heavy and dense.
